There are certain times where a good hearty slaw is the best accompaniment to a dish. Like fish and chips, or a smoky sweet pulled pork. You know what I mean. You just expect it to be there. Unfortunately, I have had my fair share or flat out crappy coleslaw in my day. Too much sauce, no flavour, not enough variety…

I came across this recipe and tweaked it a bit to make it my own. The thing I love most about this salad is the colour! Purple, green, orange, red. It’s all in there!

Purple cabbage is the main ingredient because without it, you wouldn’t have slaw. Slice it thin. Like, really thin. No one wants to chew on a massive chunk of cabbage. Purple cabbage is packed with nutrients, vitamins and antioxidants. It is so good for you and such an under consumed vegetable! Make purple cabbage your friend!

Next, grate a couple of carrots. Chop up some kale. Chop it small. Again, no one wants to chew on a massive piece of kale. Apples give it some red and white colours and a bit of sweetness. Top it with a handful of raisins and some cilantro, if you’re into cilantro. I know people either LOVE it or HATE it. I am a lover of cilantro!

When I mix up the salad dressing, I usually just eyeball the measurements, but I will give you something to follow below. Just 4 ingredients: mayo, Dijon, apple cider vinegar and lemon juice.

The flavours are something else! It really is my new favourite thing. And my kids eat it too! Even the picky one. I think I draw them in with the apples and raisins. Win-win.

Apple Kale Slaw

Ingredients

For the salad:
2 cups purple cabbage, thinly sliced
2 cups kale, finely chopped
1 apple, chopped
2 carrots, grated
1 small handful of raisins
Cilantro for garnish

For the dressing:
½ cup Mayo (full fat Hellmans is my fave)
2 tbsp Dijon mustard (I like the grainy mustard)
1 tsp apple cider vinegar
1 tsp lemon juice

So easy! Chop up your veggies and throw them in a bowl. Mix your salad dressing ingredients in a separate bowl. Combine. Top with cilantro. Boom. Best slaw ever!
